This composition which contains organic acids, vitamins, and factors affecting color, intensifies the antioxidant properties of ascorbic acid or its synergistic effect; removes colored halos around the slices of the final product, turbidity caused by consumption of carrots in products such as mushroom kielbasa and chicken, darkness caused by high consumption of carbohydrates and chicken paste (MDM) in meat products; and increases life shelf of the product.
